Improv Night

So, what does one do when they put Salisbury Steak on the menu?  Get a recipe?

Brian don't need no stinkin' recipe.

Voila!  Salisbury steak, improvised.

It was delicious.  Brian and I thought so, anyway.  Sean gave it a try and ended up eating four bites.

Will, on the other hand, was ok with the flavor until he found the greenery.  (Parsley, and maybe a little spinach.)  Then he pronounced it "a combination of a murdered cow and a vegetable garden."

In other news.....laughter will egg your ten-year-old on.  It's important to keep a stern face in these matters.  Or, at least try.

British Delicious

You know, the Brits have a bad rap when it comes to food.

Sure, they make some strange things, like beans on toast and steak and kidney pie.  (eat a kidney?  No thanks.)  However, they have some good ideas too.  Especially when it comes to pub food.  Jacket potatoes (loaded baked potatoes to us Americans), potpie, chips, pudding, etc.  Toffee.  British chocolates like Cadbury.  (OMG, real British Cadbury is out-of-this-world good!)  And don't get me started on the little slice of heaven that is warm scones and clotted cream.

In our house we have a tradition of going out for dinner after the boys (Brian included) pass their monthly "stripe test" for karate.  We were on our way to a noodle place when I was talking about the new British Beer Company.  Brian looked at the kids menu and the kids were game.  So off we went.

First of all, since it was Happy Hour we got $5 appetizers.  Soft pretzel dippers!  I know, not British but that didn't make them any less tasty, let me tell you.  Then Brian ordered a burger that actually came out cooked medium.  It doesn't happen often.  (I almost said "that's rare" but that's too big a pun, even for me)  And I ordered this thing, called a "New England Pasty."  I'd heard of pasties in reading Harry Potter and other Brit Lit, and good Lord, are they fantastic.  Basically it's like a meat pie, only this one contained hot turkey and cheddar mashed potatoes.  Excellent!!  I could only eat half, so the rest was for lunch today.  And it was every bit as good.

Chicken Tortellini Soup

My first from-scratch soup made without a recipe!  Ta-Da!

First, I boiled a whole chicken.  Yep....just threw it in a pot with some onion, carrots and celery and filled it up past the chicken.  Oh, and I added plenty of salt, a small handful.  I'm usually guilty of not seasoning enough.  I boiled that chicken for about 45 minutes, then took it out and carved it.  And by carved, I mean pulled the meat off barbarically.  :)  I threw it back in the pot with some sauteed peppers and onions and cooked tortellini.  Lastly, I tossed in fresh baby spinach leaves.  Voila!  Lunch, with a ton of leftovers.  The only thing that I thought that it could use was some mushrooms.

Can't wait to make some homemade soup again.  This weather certainly calls for it.

Meatless Mondays

We're trying to embrace Meatless Mondays in our house again....one night a week we eat a vegetarian dinner.

The past two weeks have been quite good:

First, a pasta with butternut squash, feta cheese and pecans.  Awesome, and I ate the leftovers for days!

The the other night was Wild Mushroom Farfalle, out of the October issue of Cooking Light.  I liked this too, with the spoonful of ricotta cheese on top that you stir into your plate.  The only thing I missed was something with a little crunch.  Like maybe toasted walnuts.  Just to give it a little texture.  (When I read that I feel like a Food Network judge on a cooking show, by the way.)

Also, I'd like to add that while we (meaning we the parents) are trying to adopt a meatless meal once a week, the kids have no problem doing it more often.  Meaning:  neither kid would touch this.  Still doesn't stop us from trying, though.

Eat Your Veggies!!

We're always looking for new, innovative ways to get more fruits and veggies.  OK.....we're always looking for ways to make them palatable and not eat as many carbs.  Brian and I are total carb lovers.
The first one was my idea:  baked zucchini parmesan.  And by "my" idea, I mean that I found it on Pinterest and decided to make it one night.  It was quite easy, and fresh too.  Served with some marinated chicken and a little penne.

I love to test-drive cookbooks before buying them, because it stinks to buy a book, like one or two recipes and despise the rest.  This is where the library really comes in handy.  I brought home a Good Housekeeping Book of comfort foods that are 400 calories or less.  These crockpot pulled pork sandwiches came out of it, as well as the recipe for "Honeyed radishes and turnips."  Normally I don't like turnip.  But this was surprisingly sweet and delicious!  I think it would also go well with kielbasa and a scoop of mashed potato.

Sunday Comfort Food: Chicken and Dumplings

Sundays are good for a warm, comforting meal, especially in the winter.  This week we had chicken and dumplings.

Let me just tell you, the house smelled AMAZING while it cooked.  And why wouldn't it, with onions, celery, chicken thighs, carrots, broth and bread-y goodness that is the dumpling?  Snow was falling, food was simmering, it was an iconic Winter Sunday.

And best of all--three servings for leftovers, and it's another food that tastes even better the next day.  Happiness.
